1 kg all purpose flour
700gr lukewarm milk
20 gr yeast
a pinch of salt
Mix the ingredients until the batter is soft and thick. If necessary, add some lukewarm water to make the dough less dense. Cover the dough with a tea towel and allow to rise for an hour. Fry spoonfuls of the mixture in olive oil over moderate heat. Each time make sure to rinse the spoon in a glass of water. Pancakes can either replace bread during lunch or dinner , or be served separately with honey and walnuts dessert.
